Simply Soup

Some people want salty chips when they're stressed, some pine for chocolate or sweets. Chocolate used to be my go-to stress reducer but strangely enough when the going gets tough, I make soup.

I'm not certain when this started. I think it might have happened about six years ago when I worked with a nutritionist to help me lose weight and get healthier. Somewhere during the time I worked with Debby, I began making soup as a way to get my veggies in for the day. At some point a bowl of veggie soup must have calmed my frazzled nerves and the connection in my brain that soup=calm was formed and imprinted.

Cold autumn day? I love and crave this Butternut Bisque when the weather turns blustery. It’s also fun to make if you like chopping, slicing, dicing and dancing in your kitchen. Lots of dancing with this one! The creamy texture comes from steamed cauliflower. Healthy, healthy, healthy!

Ravioli Soup is easy and scrumptious because you use frozen ravioli (without sauce) from your grocery freezer section. Kids, grandkids and adults will love it for it’s cheesy goodness and it's a great way to slip in an extra helping of veggies. Serve with crusty whole grain bread and a salad. Yum!

My no-fail spicy veggie soup requires no slicing, dicing or dancing; wonderful when you're too tired, too unhappy or too— whatever. Guaranteed to soothe and makes eight heaping servings. Freeze leftovers for later.

Super-Calm Soup

1 container Kitchen Basics Chicken Stock

1 can Hunt's Spicy Red Pepper diced tomatoes

1 can Hunt's Sweet Onion Fire Roasted tomatoes

1 can Hunt's Garlic, Basil and Oregano Fire Roasted tomatoes

1 14-16 oz bag of frozen mixed veggies of your choice

You could also add lentils, black beans, chili beans or alphabet noodles, if you want to make it more hearty but you'll need to add more chicken stock also.

And what does Earl think about cooler days ahead?

He says, “time for a sunbath!” Somedays, I'd like to lay there too, lol!
